 Did you know that May is National Strawberry Month? Everyone loves strawberries! So it's really not surprising that this little red, yummy fruit is being celebrated! Why not? Strawberries are *packed with vitamins, fiber, and particularly high levels of antioxidants known as polyphenols, and are a sodium-free, fat-free, cholesterol-free, low-calorie food. They are among the top 20 fruits in antioxidant capacity and are a good source of manganese and potassium. Just one serving -- about eight strawberries -- provides more vitamin C than an orange. So, I was thinking about how to celebrate National Strawberry Month and I came up with going strawberry picking! Picking strawberries with my kids are so much fun, and my kids love picking and eating the strawberries too! Strawberry and Spinach Salad - this salad is a must-have in my family during the summer and Spring. My parents in-law love this salad so much they personally request this from me all the time whenever we get together for dinner at my house or theirs.
