There's nothing more frustrating for a food blogger than making a smack-your-lips delicious recipe and then having the photos not really show it off, and when that happened with my Slow Cooker Greek Rice with Red Bell Pepper, Feta, and Kalamata Olives, I just decided I would swallow my pride and post it with the photos I had.  If you're a fan of Greek flavors like Feta and Kalamata olives, I hope I can convince you to try this for a Meatless Monday side dish or main dish, because I know you won't be disappointed.  Cooking rice in the slow cooker is a great way to get a nice side dish for something on the grill without heating up the house, so I'm adding this to our Slow Cooker Summer Dinners as well.

I'm not sure why, but sliders just scream summer to me, and these Guinness Pulled Pork Sliders from Gimme Some Oven are a great idea for the Slow Cooker Summer Dinners we've been collecting.  Boneless pork cooks in the slow cooker with Guinness, onion, garlic, and seasonings, and when it's fall-apart tender the meat is shredded and made into these delicious little sandwiches.

There'll be lots more Slow Cooker Summer Dinners coming in the weeks ahead, but today I want to share an idea for Slow Cooker Overnight Breakfast Potatoes with Sausage from A Year of Slow Cooking.  Not only is this a delicious-sounding breakfast to wake up to, it's easy to make, uses ingredients you probably often have on hand, and cooks without heating up the kitchen!  Stephanie used chicken breakfast sausage, but pork or turkey sausage would work as well, and I think this easy breakfast combination will be a hit with the whole family; enjoy!

Slow Cooker Vegan Fiesta Baked Beans from 365 Days of Slow Cooking

Next up for our collection of Slow Cooker Summer Dinners is this delightfully easy recipe for Slow Cooker Vegan Fiesta "Baked" Beans from 365 Days of Slow Cooking, which could be a Meatless Monday side dish or main dish.  I love that this starts with dried pinto beans that cook all day without heating up the house, but you can also use canned pinto beans if you're in a hurry, and this flavorful dish uses mostly pantry ingredients you probably have on hand.  Non-vegans can add some cheese on top, which is what Karen did to get her kids to eat it!
